That is why we roast our coffee in-house.
From origin to cup
Most Colombian specialty coffee leaves the country as green coffee. The final transformation happens somewhere else, in the hands of another roaster, under another set of decisions.
There is nothing inherently wrong with that. Roasting is a craft, and excellent coffee is produced around the world.
But for us, it raises a simple question:
Why leave such an important part of the process to someone else?
Roasting is not simply the final step before coffee reaches you. It is where the potential of the green bean is developed through heat, time and precision.
The same coffee can express itself differently depending on how it is roasted.
This is why we choose to roast at origin.
We roast with intention
Roasting in-house gives us the opportunity to work directly with the coffee we have selected.
We can evaluate each lot, understand how it responds to heat, adjust the roast profile and make decisions based on what is actually in front of us.
It is a hands-on process.
And that matters because great coffee is not about following a formula blindly. It is about understanding the coffee and knowing how to bring out what makes it distinctive.
The goal is not to change what the origin gave us.
It is to reveal it.
The sweetness. The acidity. The texture. The aromatics. The character that makes one coffee different from another.
The last step deserves as much care as the first
We spend enormous attention on where our coffee comes from because origin matters.
But if we believe that every detail contributes to the final cup, then that philosophy cannot stop once the green coffee is selected.
The care has to continue.
Through roasting.
Through resting and packaging.
Through every decision that brings the coffee closer to the person who will eventually brew it.
