PREP AND SERVE RECOMMENDATIONS
Our experience with all our coffees has been very consistent… it depends! And mainly on the access you have to different methods in the market today. One thing we can assure you, no matter which one you use, 923 Coffee will taste like nothing else you have tried before.
Here are some tips that apply to each type of brewing method:
Traditional Drip Machine
- Use only filtered cold water, not tap water (bottled water works too!)
- Use brown paper filters
- Grind the coffee to a fine texture, like the powder spices you use for cooking
- Brew no less than 3 cups of water as measured with the glass pot
- Use a ratio of 1tbs (15 grams) for each cup of water up to 6 cups. Over 6 cups reduce the coffee a pinch. If you want it stronger try filling the tbs with a little excess using the same ratios
- If your machine has the warmer plate at the bottom of the pot, turn it off once it is done! Move the coffee to a mug or thermos, DO NOT leave it on in the warmer plate
- Enjoy!

FRENCH PRESS
- Use only filtered cold water, not tap water (bottled water works too!)
- Grind the coffee to a nice medium between fine and coarse, like sea salt
- Brew the water to around 200º, if you are using a regular pot this would be when the water starts building consistently small bubbles from the bottom, DO NOT boil it!
- Use a ratio of 1tbs with a bit of excess (~18 grams) for each cup of water up to 6 cups. Over 6 cups reduce the coffee to 1tbs exact (15 grams)
- Use a container with a spout and slowly pour the hot water on the coffee inside the glass, a nice foam should start forming on the top
- Using a spoon, gently move the coffee on the top only till the foam gets thicker, DO NOT stir!
- Cover with the press plunger without pressing it and wait for 4-5 minutes
- Press the plunger to about a quarter from the bottom of the glass, DO NOT press it all the way!
- Enjoy!

CHEMEX (use with paper filter)
- Use only filtered cold water, not tap water (bottled water works too!)
- Grind the coffee to a fine texture, like the spices you use for cooking
- Brew the water to around 200 oF, if you are using a regular pot this would be when the water starts building consistently small bubbles from the bottom, DO NOT boil it!
- Use a container with a spout and slowly pour the hot water on the coffee inside the filter, a nice foam should start forming on the top
- Wait for all the coffee to filter thru (transfer to a mug or thermos if want to enjoy it warm later)
- Enjoy!

EXPRESSO COFFE MACHINE
- There are many varieties of these machines, so we recommend you follow the instructions of your machine’s manufacturer
- Enjoy!
WHAT ABOUT MILK AND SUGAR?
We encourage you to try it without milk or sugar, at least the first few sips, and then adjust accordingly. If you must use milk, then try upping the coffee ratio both at preparation and serving.
Our coffees have natural sweet and fruity notes so just a little bit of sugar does the trick, try it with a quarter of what you are used to first. Turbinado sugar (i.e., sugar in the raw) is recommended, but if you have access to ‘panela’, this is the best alternative hands down!
