The harvest of 923 COFFEE is an art passed down through generations. Indigenous women walk thru the coffee fields at dawn, guided by sight, by touch, by the silent experience of those who know the perfect bean. Only those cherries at the precise point of ripeness, no sooner, no later, are picked by hand.
This process, impossible for machines to replicate, guarantees exceptional selection. A precision that defines the cup’s quality: more sweetness, more clarity, more expression of origin. 
Each bean is the result of a conscious, human, fair, and attentive choice.
 

Processing in Natural Rhythm

Protected beans. Pure water. Direct sun.
At the end of each harvest day, the freshly picked cherries are brought to the beneficiaderos (processing stations), where they are prepared according to each of 923 COFFEE’s process: traditional (washed), natural (waterless), and honey (with some mucilage). Only perfect cherries move forward; green, overripe, or damaged ones are carefully discarded.
Whether it is the traditional, natural or honey process, the beans are processed with spring water to preserve its integrity and flavor. Afterward, they are slowly sun-dried on raised beds that allow natural airflow taking them to their parchment state, retaining their character, energy, and ideal moisture.
Everything is done with pace, honoring the rhythms of the earth. Because true value cannot be rushed. It must be honored.
